Heaven in a serving bowl....

My mom and I came across an outrageously good dip recipe in Good Housekeeping last week. It was from their "Celeb Dish" section and Trisha Yearwood (married to Garth Brooks) had submitted the recipe. After salivating for days....we made it for Christmas Eve and it was gone within the hour. It was great! Warm Feta Dip with Artichokes

1 can (14 oz.) artichoke hearts, drained & finely chopped
5 oz. feta cheese, crumbled
3/4 c. mayonnaise
1/2 c. freshly grated Parmesan cheese
1 jar (2 oz.) pimientos, drained & diced
2 tsp. minced garlic
Melba toast or pita chips, for dipping

Preheat oven to 350 degrees. In a medium bowl, stir together artichokes, feta, mayonnaise, Parmesan, pimientos, and garlic until combined. Transfer mixture to small casserole or glass pie plate and bake, uncovered, 25 minutes or until lightly browned. To serve, place casserole on a larger platter, and surround with Melba toast or pita chips. Makes about 1 2/3 c. dip or 8 servings.
