We celebrated my mom and Norma's (a family friend) birthdays in a joint party on Sunday evening. We made homemade enchilada sauce, enchiladas, chili rellenos, rice, beans, salsa, and a couple of cakes. It was a really fun night....Happy Birthday!
Here is the cake that I took to the party. It has a yellow cake bottom topped with a cream cheese, vanilla pudding, and crushed pineapple mixture. I then put Cool Whip all over the top and sprinkled it with toasted coconut and chopped walnuts.
