Muffin Tin Cookies.....

Here are a few more pictures for Michelle (Beak). I wrote back in April about how she LAUGHS at how I cook in NYC. You can read about my Lasagna in a Bundt Pan if you click HERE. Anyway....I had no cookie sheet so I used muffin tins. I call it creative and learning how to live in small spaces.....Michelle calls it crazy! The recipe is from a blog that I check out every once in a while. The girl is someone that I knew back in Jr. High School but haven't talked to in years.....I don't think that she even knows that I found her blog. Anyway.....I guess that these cookies are a family favorite for them.....mine kind of turned out like bricks but they were still tasty.

Oatmeal Peanut Butter Cookies
2 eggs
2 sticks of butter
4 Tbsp. peanut butter
1 c. sugar
1/2 c. packed brown sugar
2 c. rolled oats
2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
Mix all ingredients and drop, from melon baller, onto cookie sheet. Bake @ 350 degrees for 9 min. Let cool on cookie sheet for 2 min. Move to a cooling rack. ENJOY!!!

"Bricks" huh!! LOL- I died laughing at that one!! and ya- you are super creative when it comes to cooking, and when it comes to entertaining, you are ALWAYS the star of the show!!!!

oh- and by the way- i'm so glad you post pictures with all your yummy recipes. I just can't seem to follow a recipe if there isn't a picture to go along with it. I wonder if anyone else has trouble?

Yes...they were kind of like bricks...but "healthy" ones because they have oatmeal. Ha!

I just see perfect little cookies. Maybe we will do it this way from now on. I loved your bundt pan lasagna! I thought it was very clever!
