Mini Easter Cupcakes....

I made some really fun cupcakes the other day. I wanted to make some mini cupcakes too....so I did! I think that they turned out really cute too. Can you believe that 1 box of cake mix makes 48 mini cupcakes. I think that it is going to be my "go to" when I am asked to take thins to pot-lucks and parties.I had made the violet and turquoise frosting in the morning. All I had to do was whip up some sunset orange.I guess I was inspired to make the cupcakes since there was really no need for them. That night we went to a church Easter party for the children....they had no desert because they thought that the candy from the egg hunt would be sufficient. I grabbed my cupcakes and decided to pass them out. They were a HIT with the kids!Oh....remember how I told you that my friend gave out a GREAT tip about how to keep your icing bag clean?! This is kind of what I meant. I filled my bag (this is where you could use Saran Wrap like my friend showed)....Then I put it in my bag.....Cut off the tip.....When I was done....I just had to pull it out and toss it! What a time saver!
