This picture is not the best...the flash made the cookies look SUPER orange. Let me tell you though....these cookies are yummy! I used the make these cookies with a girl from my ward when I was growing up. They had about 12 kids in their family and pretty much "anything went" in their house. We would quadruple this recipe and make enough for an army. I remember sitting on their kitchen floor and gripping the bowl with our legs and feet, like Mowgli in the Jungle Book when he would climb up the trees, as we smushed the batter together with our hands. Yup...a very sanitary process! We never used a mixer and a spoon would have never done the job. They always said that they turned out better because we used our hands. I think I believe them....I have used my hands for all 9 batches that I have made since I located this childhood recipe a few weeks ago. I take these places and everyone dies for them...many ask for more. Try them out...,you might like them!
Pumpkin Chocolate Chip Cookies
2 C flour
1 C Sugar
1 C pumpkin
1 C shortening
1 egg
1 t vanilla
1 t baking powder
1/2 t salt
1/2 t soda
1/2 t cinnamon
1/2 t nutmeg
1 C chocolate chips (I use aprox 1 1/2 C)
Mix it all together and bake at 350 for aprox 15 minutes. Drop by big spoonfuls on an ungreased cookie sheet. (the original recipe doesn't call for cinnamon but I like it). I found that they turn out the best when they are kind of big and not overcooked. I don't like it when they are rocks. Just bake them until they are browned on the top and not too brown on the bottom. They are super moist. Yum! Oh...I think that they might be even better with Walnuts...I haven't tried them that way though. Let me know if you try them...
