This would be a perfect science project for a kid to do......so, here is the challenge for all of you "smart" people out there. Why did my garlic turn green? I LOVE garlic and I am tired of chopping it up all of the time. Some of my friends make a puree and keep it in the fridge so they can just spoonful it out as they need it. Well.... I did the same thing! I put about 8 heads of garlic in a food processor and then kept it in the fridge in a glass jar. It was okay for a day and then it turned green. None of my friends understand because they say that their garlic never turns green. What happened with mine? Is is like apples or avocados that change when air hits it?Maybe I will have to mix it with some olive oil or something to help preserve it. Hmmmm....

wow, i've never seen garlic turn this shade. we always mince ours (in blender chopper thingy) and it turns slightly yellow from its own oils, but never avocado green. do you think it's because they're pureed and something about the oils or something?
