This picture might look a little unappetizing...but don't be fooled! This is a SUPER quick meal that I make sometimes and it is SUPER easy and tasty. All I do is chop up a couple of peppers.....I like red and orange or yellow because they are sweet and also because green makes me want to hurl. Then I chop up an onion (today I used two green onions from tip to tip because I didn't have a regular onion). Throw the veggies in a pan on the stove with some PAM and then let them cook and you can cover if you want them to sweat a bit. Then I chop up a half of a Hillshire Farms Sausage (they have a healthy low-fat Turkey kind) and mix with the veggies. I serve it over rice and I love it because you get a bunch of veggies and they are great because they kind of caramelize and get sweet. Yum!

i love this quick easy meal. I'm with you, i can't stand green pepps, but the red are deliciouso.
I don't make it as healthy though. i cut up potatos with the onion and pepps, and fry them up in a bit of oil, then add a whole shlong instead of a half, fry it up and add a dash of worchestershire. i've never served it over rice.. duh! look at what ive been missing.
well, if i can get my warden to buy these, i will give it a go "sandi style" soon. ;)
